Bought a VSM500 for my wife for Xmas 2005. The issues we have had: 1. The instruction manual asks you to remove the beaters/dough hook etc in a clock wise manner. So, we got the beater in but then couldn’t get it out. We tried and tried and were very discouraged. Well, my wife went back in and tried some hours later and it just popped right off. So we repeated the process and realized that to get the accessories off you actually have to remove them counter clockwise. Would be clockwise if you were looking down on the unit. Anyway, initially found that discouraging. Also, there is a round plastic piece that the mixing bowl sits on as it comes out the packaging, do not discard. Granted we have had the unit all of one day, but the plastic piece actually helps put the bowl on and take it off. Without it we found it to be somewhat tight.
I post this here b/c I couldn’t find anything when I was looking to see what the problem was with our unit.
Having listed all the cons I still say, kudos to viking on the whole. The machine works remarkably well. Mashed potatoes, whipped cream, bread, rolls all in a day! A decent large capacity mixer but no miracle. Heavy (31 pounds) but has wheels in back for moving it. Is very LOUD when running- -no help period from customer service, so don’t even call them. The seller may help you, but Viking will not. Mixer (VSM700) is too large to use under cabinets, tho I can store it under mine. Another con is that you have to stop the mixer and lift the beater to add ingredients or scrape down the bowl.
Also, we’ve had trouble with the mixer missing ingredients in the bottom of the bowl, so you have to stop and scrape the bottom up thoroughly. And the grey finish stains easily, so wipe down promptly. We left some batter on one side of the base while we baked some of it and now have permanent stains along that area. Disappointing.
It is not necessary to slam the mixer head down to lock it (as stated in some cooking magazines) you just pull the lock lever forward, put the beater down into position and let go of the lever. It’s locked down. (One magazine review said it “requires a ridiculous amount of force to lock mixer head into position.”) One pro is the large capacity which allows doubling or tripling of recipies. When lean ground beef is on sale, we make four meat loaves at once and put the extra three in the freezer. One mess, four dinners. Another pro is the 1000 watts, which handles it all.

I do a lot of baking, and often double and triple recipes. My largest kitchen aid was overwhelmed so I purchased this machine. I can’t say that I’m overly impressed - I would have rated it a bit better than my largest Kitchen Aid but not incredibly so. But then the paint started to chip off the bottom and sides of the area where the bowl sits. I called Viking (this isn’t an easy task to get to customer service through Viking) and they told me I had to send it to Detroit that no one would fix it locally. While I was contemplating this expense, the bowl got totally stuck on the machine and wouldn’t come off even with using oil so I packed up the whole mess and sent it to Detroit - shipping costs $30. I did not receive any confirmation that it was there (McNichols electric) or that they were working on it, so I emailed them. I received an email saying that I had damaged the paint by using oil! I called them and told them that no, the damage was done before I used the oil, and it was my belief the bowl stuck because of the paint flaking off. The guy told me that there was no way they could fix it - the paint wasn’t repairable (this is opposite what the Viking rep told me) but he would wait to get one returned and swap bases which could take a month or more. I told him I would be glad to have a new base in any color as long as the paint didn’t chip and he said that would speed up the process. But he told me that a) they wouldn’t reimburse me for shipping and b) shipping something from NY to Michigan that weighs 30 pounds should only have cost $8.95. I want to know what postage service he uses. SO - I am out the $30 for shipping and will be getting back a mixer with un-matching colors, having spent $30 plus of my own money to send it to Detroit. My advice would be - stick with kitchen aid. I think I could have gotten their products fixed locally. To have paint totally flicking off on a mixer that costs $500 is unbelievable.

I have worn out 3 Kitchen Aid mixers in 30 yrs. So the Viking 7QT has some big shoes to fill. I let the mixer set on the counter for 3 days before using it. Just wanted to admire the BIG beautiful red thing. First test was a triple batch of my grand childrens favorite cookies. 6 cups of flour and 6 cups of oatmeal did not phase the Viking. It has ample power to accomplish most any kitchen task put before it. I have seen some reviews that the beater does not clean the ingredients from the bottom of the bowl. I did notice that on my first use but my husband was able to make a simple adjustment according to the manual and it is perfect now. Nothing against KitchenAid, as the brand served us well for such a long time but I am certainly happy with this purchase. Only wish I had not waited so long.
